Spicy Asian Cucumber Salad

Ingredients

  • 4 small cucumbers
  • 1 garlic cloves(minced)
  • 2 tsbp rice wine vinegar
  • 1/2 tsp gochujang
  • 1/2 tbsp soy sauce
  • 1/2 tsp granulated sugar
  • 1/2 tsp kosher salt
  • 3/4 tsp chili oil
  • 1/2 tbsp sesame seeds
  • 1/2 tbsp scallions (chopped)

Instructions

  1. Cut the cucumbers into bite-size pieces
  2. In a medium mixing bowl, whisk together the garlic, rice wine vinegar, gochujang, soy sauce, sugar, salt, and chili oil.
  3. Add the cucumbers to the mixing bowl and toss until coated.
  4. Garnish with scallions and sesame seeds.
  5. Refrigerate for 10 minutes before serving.
