Polenta

Ingredients

  • 2 cups water
  • 1/2 tsp salt
  • 1/2 cup fine yellow cornmeal
  • 1.5 Tbsp butter
  • 1/4 cup freshly grated parmesan

Instructions

  1. Boil the water and salt in a pot with a lid.
  2. Reduce heat to medium-low and slowly add cornmeal, whisking it well with the water.
  3. Cover the pot and cook for 30 minutes, stirring every 5 minutes.
  4. Turn the heat off, then stir in 2/3 of the butter and parmesan.
  5. Transfer to a bowl or plate, garnish with the remaining butter and parmesan.
  6. Optional: sprikle parsley or chives on top
