- 1/2 cup finely chopped parsley leaves
- 4 cloves garlic (minced)
- 1/2 tsp red pepper flakes
- 1 tsp oregano
- 1/2 tsp kosher salt
- 1/4 tsp black pepper
- 1/2 cup extra virgin olive oil
- 2 Tbsp red wine vinegar
Instructions
- Finely chop all the dry ingredients and place in a jar.
- Add olive oil and red wine vinegar.
- Stir until everything is well mixed.
- Serve over steak or on the side.
Notes
Chop the ingredients by hand. Using a food processor can blend the ingredients into a homogenous liquid.
Red pepper flakes and dried oregano can be substituted with finely chopped red pepper and fresh oregano. Use approximately three times the amount.
Store the chimichurri in a jar in the refrigerator. The oil will separate and harden, so be sure to remove it from the refrigerator well before serving. To mix the ingredients again, shake well before opening.
