Ingredients
- 1 1/2 oz bourbon
- 3/4 oz lemon juice (approximately 1 lemon)
- 0.5 Tbsp erva-mate
- 1.5 tsp honey
- 1 oz hot water
- 0.5 oz peated whisky (Laphroaig or Ardbeg)

Instructions
- Add 1.5 tsp honey to 1 oz boiling water, then steep erva-mate in this water for 10 minutes. Allow to cool down before proceeding.
- Transfer the erva-mate-honey-syrup to a mixing glass with ice, then pour in bourbon, and lemon juice. Stir until chilled.
- Pour over a large ice cube, and layer a 1/2 oz of peated whisky on top (or use a spray bottle). Garnish with a lemon peel.
Notes
If peated whisky isn’t available, use 2 oz of bourbon to keep the cocktail balanced.
Use the vibrant green variety of erva-mate from Brazil.
Optional: Add a 1/2 oz of ginger liqueur (Domaine de Canton) for a hint of ginger flavor that goes well with this cocktail.
