- 1/2 cup unsalted butter
- 1 Tbsp vegetable oil
- 1 1/8 cups extra fine granulated sugar
- 2 eggs
- 2 tsp pure vanilla extract
- 1/2 cup all purpose flour
- 1/2 cup unsweetened cocoa powder
- 1/4 tsp salt
Instructions
- Preheat oven to 350°
- Line a 9″ x 13″ pan with parchment paper
- Melt the butter and pour into the bowl of a stand mixer.
- Add the oil and sugar and mix well using the paddle attachment with scraper on low/medium speed.
- Add eggs and vanilla extract and continue to mix.
- Slowly add the flour, cocoa powder, and salt. Be careful not to over-beat.
- Pour the batter into the pan and bake for 20-25 minutes (until the brownies no longer jiggle in the pan).
- Allow to cool at room temperature before slicing.
Notes
Best served warm with a scoop of vanilla ice cream and chocolate syrup.
Optional: before baking, top the brownie with chocolate chips.
