Fudgy Brownies

Ingredients

  • 1/2 cup unsalted butter
  • 1 Tbsp vegetable oil
  • 1 1/8 cups extra fine granulated sugar
  • 2 eggs
  • 2 tsp pure vanilla extract
  • 1/2 cup all purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1/4 tsp salt

Instructions

  1. Preheat oven to 350°
  2. Line a 9″ x 13″ pan with parchment paper
  3. Melt the butter and pour into the bowl of a stand mixer.
  4. Add the oil and sugar and mix well using the paddle attachment with scraper on low/medium speed.
  5. Add eggs and vanilla extract and continue to mix.
  6. Slowly add the flour, cocoa powder, and salt. Be careful not to over-beat.
  7. Pour the batter into the pan and bake for 20-25 minutes (until the brownies no longer jiggle in the pan).
  8. Allow to cool at room temperature before slicing.

Notes

Best served warm with a scoop of vanilla ice cream and chocolate syrup.

Optional: before baking, top the brownie with chocolate chips.
