Ingredients

Units Scale
  • 1 cup whole milk
  • 1/4 cup vegetable oil
  • 1 lb. tapioca flour/starch
  • 2 tsp salt
  • 10 oz grilling or frying cheese (queso fresco, queso de freir, etc.)
  • 1 cup grated parmesan cheese
  • 2 eggs

Instructions

Preparing the dough

  1. In the bowl of a stand mixer, whisk together the tapioca flour and salt
  2. In a saucepan over medium heat, stir together the milk and oil over medium heat and bring to a simmer.
  3. When large bubbles start to form, pour the liquid into the tapioca mixture and mix using the dough attachment.
  4. In a separate bowl, combine the cheeses and eggs. Add this to the tapioca mixture once it has cooled (approximately 10 minutes) and mix on low.

Roll the dough into balls and bake

  1. Preheat the oven to 350°  and line a baking sheet with parchment paper.
  2. Keep a small bowl of vegetable oil nearby to keep your hands oiled.
  3. Scoop a 2 tablespoon portion of the dough at a time, roll into a ball, and arrange the balls on the baking sheet approximately 2″ apart.
  4. Bake for approximately 30 minutes, depending on the size of the balls. They should be golden brown.

Notes

Try adding herbs to the dough, such as oregano.
