Flaky Biscuits

Ingredients

  • 2 cups all purpose flour
  • 1 Tbsp granulated sugar
  • 1 Tbsp baking powder
  • 1 tsp salt
  • 6 Tbsp unsalted butter (very cold)
  • 3/4 cups whole milk

Instructions

  1. Line a baking sheet with parchment paper and preheat oven to 425° F.
  2. In a large bowl, mix flour, sugar, baking powder, and salt.
  3. Using a box grater, shred the cold butter into the bowl.
  4. Stir the butter into the flour mixture until it turns into coarse crumbs.
  5. Add milk and stir to combine.
  6. On a well-floured surface, work the dough with your hands.
  7. Fold the dough over itself 6 times, then flatten it with your hands until it is approximately 1″ thick.
  8. Cut the dough into 3″ circles using a biscuit cutter and arrange them on the baking sheet approximately 2″ apart. Make the cuts as close as possible.
  9. Rework the remaining dough to get a couple more biscuits out of it.
  10. Bake for 12 minutes until the biscuits begin to turn golden brown.
  11. Remove from oven and brush each biscuit with melted butter.

Notes

For flakier biscuits, place butter in the freezer for 15 minutes.

Mix by hand with a spatula; do not use a stand mixer for this recipe.
